Editorial
Building for gastronomic
purposes covers a broad typological spectrum, from
a
kiosk for snacks in a pedestrian
precinct to a luxury restaurant, or from
the
coffee bar round
the corner to a staff canteen.
These
various situations are
subject to different conditions on the
design. Apart from the general theme of
food
preparation
and
catering,
all
locations
of
this
kind
have
one
thing
in
common:
the need for qualitative architecture. For that
season, Claudia Fuchs
has given
her introductory article on current
trends in restaurant design the
title
”
A Feast for
All the Senses
”
.
In the meantime,numerous fast-food
chains have also come to recognize the
importance of a good visual ambience
and have given their establishments a
modern
corprate
design.
The
Salad
Station
in
Istanbul(page
256)
is
an
example of
this.
Whereas people go to a kiosk, a
fast-food restaurant or a university dining hall
mainly for something quick to eat, in a
restaurant or a cafe they may wish to
stay
longer to enjoy
the scope for communication that exists
there, and they
will often
expect to experience something special. For that
reason, one
’
s stay
in such a environment should be given a
appropriate staging by architects and
designers, who create a special field
of tension with its own dramaturgy
.
This
extends
from
the
reception
area
through
the
dining
room
to
the
kitchen-of
which guests may catch a glimpse-and
the sanitary facilities. In many cases, a
wide range of materials may be
combined, as in the Pollen Street Social in
London by Neri & Hu(page 284). But the
fact that a company canteen can also
make a strong impact is demonstrated by
the new dining space of Der Spiegel
magazine by Ippolito Fleitz with its
speaking,illuminated ceiling and reflecting
panels(page
292).
As
the
projects
in
this
issue
show,
restaurant
design
is
moving
away
from
cool,
minimalist
concepts
and
acquiring
an
increasingly
emotional
quality
