1,
800 years ago. It’s a
traditional food loved by Chinese
people, especially in the
northern
China where people love pasta. We eat dumplings
during meals or as snacks. It’s a
tradition to eat dumplings at the
Chinese New Yea
r’s Eve as an
important part of the festival.
As
you probably know, the Chinese New Year
or the spring festival
is
the most important festival in China.
It’s first and foremost a
family
reunion event when the whole family gathers and
has a
feast. But the most celebrated
dish will be the dumplings. We
make,
cook and eat dumplings to wish each other the best
of the
New Year. You can have so many
different ingredients in
dumplings,
mixing meat, vegetables and sea foods. You can
also
put peanuts or candies in them to
make a few Lucky dumplings.
The ones
who get to eat them will be the most fortunate and
the
most blessed. The dumplings
symbolize the reunion. It also
represents high esteem and friendship
toward a guest and a friend.
Now, let’s talk about how to
make dumplings. Mme Xiao will
demonstrate the procedure.
Well, basically you’ll need the
wrapper and the stuffing to make a
dumpling. To make the
stuffing, you
need to do the chopping and the mixing. Whatever
you decide to put in the dumpling,
you’ll have
them chopped to
little pieces and make a good mixture
out of it, adding water and
vegetable
oil if needed. To make a wrapper, the first step
is
kneading the dough with wheat flour
and water. Then with a
rolling pin, we
make the wrappers. It really requires skills. Then
comes the wrapping, which is also a
rather demanding thing to do.
You have
to not only fill the dumpling but also make a nice
shape
of it, usually people prefer the
gold ingot shape.
Now that the
dumplings are wrapped, we can cook them in
bo
iling water. It’s
important to stir a little with a spoon to make
sure that the dumplings don’t stick to
the bottom. It takes about
twenty
minutes.
